Vegan Curd - EASIEST RECIPE EVER!

Hello Cow Friends,

Some humans are extremely attached to curd, curd rice, butter milk, raita and other related products. But why do they need our milk to do all this when they have such awesome recipes to follow from? They really need to let us alone, right? So here goes:

This recipe will take a day to make, since you need some time for the fermentation. 

What you need:

1/2 cup peanuts
1 cup cooked white rice (polished/unpolished)
1/2 cup moong bean
And some patience

What you need to do:

Soak peanuts in water and let it stay overnight.
Soak moong beans in water and let it stay overnight.
Wake up next morning. 
Drain peanuts, add fresh water and blend well until it becomes smooth and milky.
Add cooked rice into the blend and make rice milk.
Mix the rice milk and peanut milk together and heat for just 2 minutes.
Now, add the water of the moong beans.
Wait for 8-10 hours for the most perfect curd!


P.S: You can substitute any nut for peanuts. :)

Chocolate Muffins

Did you know how easy it is to make muffins? It is very easy. However, the main ingredients are patience and practice. 

These aren't perfect, but they were so yummy! 

Ingredients:

Baking flour - 2 cup
Cocoa power - 1 cup

Brown sugar/Agave - 1 cup 
Baking soda - 1 tsp
Baking powder - 2 tsp
Salt - 1/4 tsp

Chocolate soy milk - 1 cup
Vegetable oil - 1/8 cup
Chocolate essence - 1 tsp

Method:
  • Mix the dry ingredients in a separate bowl
  • Mix the wet ingredients in another bowl; whisk until mixture becomes one
  • Preheat oven to 175c for 10 minutes
  • Mix the wet and dry ingredients together until it becomes one
  • Eat the batter because it's yummy
  • Wipe the muffin tray clean, and layer with muffin cups
  • Do not try to eat the muffin cups
  • Use an oil brush and line the cups 
  • Pour the batter into the cups to about a quarter
  • Once the oven is heated up, put the muffin tray inside and bake at around 200c for 12 minutes
  • Check with a toothpick if the muffins are done properly
  • Enjoy!

Curd Rice

Hello world!

Today, we are eating curd rice for lunch. It's so yummy and filling. But the real fun part lies in the making of it. We made it with almonds today, but you can also make it from peanuts, cashews, brown/red rice! 

Here's how you make curd rice: 


  • Soak 10-15 almonds in warm water for about an hour.
  • Peel them (if you have patience), otherwise never mind.
  • Throw away the water and put the almonds in the blender, add fresh water.
  • Blend until it becomes like milk. Don't make it a thick paste.
  • Wait for about 10 minutes, and then boil it. Remember, don't forget to keep stirring it while it is on the stove, otherwise the milk will stick to the bottom of the vessel.
  • After it boils, keep it aside for a few hours until it completely cools down. 
  • Add 10-12 chilli crowns to the milk (it helps with the curdling process) and let it be for 10-12 hours.
  • Remove the chilli crowns and tadaaaa! There's your curd.
Don't you worry, the chillies do not add any flavour to the curd whatsoever. They simply do their job and leave. 

Today, I'm having curd rice with schezwan chutney, you can have it with any side dish that you like.

Butter Mushroom Masala

Hi there!

So today, my human and I made Mushroom Masala. Mushrooms are high in Vitamin D and you should consume them because it's good for your health. You can also laze with me in the evenings when I sit in the balcony and enjoy the sun's rays. But if that's too much work, you can try mushrooms. 


Here's how you can make this:

  • Cut onions into tiny pieces. Next also cut mushrooms. (Don't forget to wash them)
  • Take about 3 tomatoes and put them into the blender, along with a handful of cashews. Blend them drrrrrrrrrrr!
  • Either use plant based butter, or olive oil will do. Saute the onions first, until they turn red.
  • Add the mushrooms to the onions. 
  • Wait for them to cook till they're done ok ok. Should not be very finely cooked.
  • Add the gravy from the blender into this and let them boil together, happily ever after.
  • Add kasuri methi (magic ingredient) to it for garnishing. Mix them well or else I will make the leaves disappear. 
So simple, no? You don't need dairy products to make it taste the same. Cashews are such rockstars! 

Butter Mushroom Masala tastes best with chapatis, you can have it with rice too.

Actually no, there's another story to this.


My grandmother was in a dairy farm ages ago and was ill-treated for a long time. Nah, I'm not emotional about it. I don't even know who she is, I've only heard stories from my mother and her sisters. Apparently it was quite terrible. But hey! Look at me, I'm so happy and free wheeee!

I am my human's favourite and we have a wonderful time in the kitchen. We just don't cook, we also gossip and also have a lot of fun. I'm fun, ok? 

I'm going to show you what we eat everyday, and also tell you how we made it. By the way, I might also tell you stories I've heard about my family. You know, I once had an uncle who..
